What does acidity actually mean in olive oil?

Olive oil acidity refers to the percentage of free fatty acids expressed as oleic acid. It is a laboratory measurement and cannot be determined simply by tasting how acidic the oil seems.

Free acidity increases when olives or oil have been exposed to conditions that allow triglycerides to break down, which is why careful fruit handling and production matter.

Acidity is important, but it is only one part of olive oil classification. Sensory quality and additional chemical criteria are also required.
