Balsamic pearls: its health benefits

The Latin balsamum is the term from which the word “balsamic” comes, which translates to “balsam”, which translates to “cure”. This vinegar is made with grape must, either in whole or in part.

The longer a balsamic vinegar ages through the fermentation process, the more pronounced the health benefits become. However, sourcing authentic balsamic vinegar that has been aged for 12 years can be a challenge.

  • can support digestion by providing enzymes and probiotics that promote a healthy intestinal flora. People who include probiotic-rich foods in their diet may experience reduced bloating and improved nutrient absorption.
  • In the fermentation process, compounds are formed as a result of the interaction between amino acids, known as the Maillard reaction. This chemical reaction occurs between amino acids and reducing sugars, adding colour and flavour to food. The reaction was discovered by the famous French chemist Louis-Camille Maillard in 1912 during his research on protein synthesis. These compounds play a role in protecting the stomach from oxidative stress and also help reduce the chances of developing diabetes and Alzheimer’s disease.
  • Abundant in polyphenols, these compounds are commonly found in various foods of the Mediterranean diet as well as in balsamic vinegar. They play a key role in lowering triglyceride and cholesterol levels, ultimately reducing the risk of heart disease and preventing plaque build-up in the arteries.
  • People who may have sensitivities to sulfites are able to safely consume balsamic vinegar, as the sulfites are natural and are not added as a preservative. Sulphites can also be found in cheese, organic wine and authentic balsamic vinegar due to the natural fermentation process.
